Appreciate you sharing with us! The bad news, which I’m sure you already know, is your GPA when it comes to your top two tiers of schools that you listed - you’re on the end of the spectrum there. The good news is that if you can nail a 750 on the GMAT, it puts you back into contention. Don’t just assume that you’ll get a 750 though, make sure you follow through and deliver as this is a critical portion of your application given your low GPA.
Growing your leadership skills and transitioning to a PM role will certainly help but I’m interested to hearing more about what is sparking your desire to switch to a smaller company. Also, what do you do for United Way? 4 hours a month isn't exactly a ton. Hoping this is more of a leadership role where you are driving results and having a major impact in your community. Volunteering for the Olympic games would be a great addition – if nothing else, you’ll be able to draw on your experiences for your essays here. Assuming that you have some time before you apply, I’d recommend finding another extracurricular activity that you are passionate about and contribute a lot to. All the other extras are great ideas.
Without more information, it’s tough to say which schools you’re aligned to vs. a reach for, but hopefully the above feedback is valuable to you. The problem is without a GMAT (and no, a "I think I can get..." doesn't count) it's impossible to talk about schools or chances. I'm saying this because we see it every year. "I was scoring 750s on my mocks but i don't know what happened! I got a 650 instead!" Not saying that'll happen to you (I'm sure you'll crush it!) but don't put the cart before the horse. When you have your GMAT in hand and other activities / classes figured out, then let's chat.
