I think you're choosing the right range of schools - assuming you put together strong applications, you should be able to get into at least a few of them. And if you're gunning for mgmt consulting, you can be a little more ambitious with your school choices - replace Texas with Kellogg, which means there won't be any true safety schools on your list, but where you should still have a shot at getting into at least some of the schools on your list. Where your strength seems to be is your volunteer/extracurriculars - and I assume that is what you're going to highlight in your applications.

I have a quick follow up question:
It seems most schools want both letters of recommendation to be from supervisors at work. If I place a large emphasis on my extracurriculars, should I have one of my two letters be written by someone associated with an extracurricular, such as a trip leader for Bike & Build?
