Thanks for reaching out! Overall I think you have an interesting profile with some unique aspects. I'm glad to hear that you're retaking the GMAT. As I'm sure you know, you're part of an over-represented applicant group so anything you can do to rise above will be an asset to you. In terms of your work experience, it will be important to highlight your experience leading others and achieving results above and beyond your day-to-day responsibilities. Were you promoted? If so, great! And be sure to include that. It's not clear to me if your role is volunteer-based with the UN, but if so, it would be interesting to include your reasons for quitting a lucrative job to pursue an unpaid volunteer opportunity. Either way, that experience should be a perfect opportunity to highlight your unique perspective and contribution to the class.
Your lack of ECs is not ideal but perhaps could be offset with your experience in the UN role and also what you were involved in in undergrad.
In terms of your career goals, I'm curious to know why you went from a managerial role in the energy industry to a project management role at the UN and now you want to go back to the energy industry in a consulting capacity. Telling that story in a direct and compelling way will be important in articulating your post-MBA career goals in both your essays and your interviews.
Your school list is ambitious but certainly not impossible. I would urge you to approach school selection strategically and think about which programs are really the best fit for you on both a personal and professional level. I find that when my clients have these really honest discussions with themselves, they end up paring down their school list to no more than 4 or 5 programs. I would encourage you to do your research and reduce your list to a more manageable number. That will help you prioritize your efforts and maintain better focus.
