Hello,
I'm looking at applying to business schools in Paris for 2016 for a MSc in Management.
I graduated in 2014 from a good university in Australia, majoring in Political science and french studies.
I'm interested in several schools, mainly Essec Paris. I know a lot of students from India and Asia apply for the program so I'd like to know if there's a quota on how many students from each region are accepted. Friends in Paris have told me that being Australian is an advantage and even though my grades aren't as strong as some of the people I've seen posting on here (who have a GPA 3.5 and GMAT 720...) I still have a chance.

Yes all business schools like to diversify their student body, so haling from an under-represented part of the world can be an advantage since you can offer a perspective in the classroom which not as many other students have. Having said that, the MS programs are more interested in academic achievements and GMAT than background in general (unlike MBA programs) so you appear to be competitively qualified from that perspective as well.
