Hi Alex, I'm a big fan of yours. You manage to be funny and up front at the same time. I am studying for the GMAT now and am aiming for a 750.

Asian(Pacific Islander), Male, 28 at matriculation
Education:
MS Financial Engineering 2013, GPA: 3.7, Not ranked
BS Computer Engineering 2009, GPA: 3.38, Regionally ranked
Work Experience:
4 Years, Energy Engineering/Smart Grid for a Fortune 100 Company at application
Couple of months at a BB in their leadership program
Extracurriculars:
Heavily involved with church,120 Hours/Year. Leader of 20+ inner city teenagers.
Chairman of professional society during undergrad, with over 200+ members. Made significant impact on school's engineering program and student's careers opportunities.
Target schools: Harvard, Stanford, Wharton, Columbia, NYU, UT Austin, Rice
Area of interest: Consulting or the Energy sector

I think you can narrow your range a bit.
H/S/W -- choose 1 to 2 at most; these are stretch schools; and you don't want to spend too much of your time on schools at the expense of other schools where you have a better shot and where you could be just as good of a fit (and still reach your career goals).
Columbia, Booth, Kellogg, Sloan, Tuck -- these level of schools should be your focus; choose 2-4 from this list
NYU -- not quite a "safety" but you have a reasonable shot;
And I don't think you need to go outside the top 16 to be honest. If you spread yourself across 5-6 schools as I've suggested above, you should have a reasonable shot of getting in.
