You have a strong application and you are correct that part-time MBA programs tend to look more at a candidate's work experience, as opposed to their GMAT score and undergraduate GPA. You certainly have some excellent leadership experience as well.
My concern in your GMAT lies in the fact that it is substantially lower than the average. Let's consider Chicago Booth (which has a similar GMAT score to NYU). The school has an average GMAT score of 720, with an 80% range of 660-760. This means that if you applied, your score would be in the bottom 10th percentile. This does not necessarily mean you wouldn't be accepted, but it is not a preferable position to be in.
Other than this point, you do have a strong application. As a note, do not underestimate the importance of your personal essays and letter of recommendation.
