Thank you for your advice Linda. I had two quick follow-up question. What quantitative score would be considered a good score, given my profile? And would you advise my re-taking the GMAT if there was a reasonable chance that I could raise my quantitative score? Thank you for your help Linda!

You would want to get over 80% on the quant and the verbal to compensate for the GPA. If you want to go to the schools you initially listed or even have a better chance at the programs I suggested, and you think you can raise your GMAT quant score, then yes, I would advise retaking.
