Why have you chosen these schools? I am interested in hearing a bit about your selection process in order to determine how the schools will see your fit with them. I am not sure waiting before applying will help, even if your work experience is a bit short, but waiting with not make a difference when it comes to your GPA. (An impressive GMAT score can, however, and as I see it, you do have that)
What will “seal the deal” instead is how impressive your work experience during these 2 years has been and what more specifically you have achieved during that time (anything that can be measured and compared to others in a similar position is great as a measuring stick) so I would need to hear a bit more about that in order to give you a proper evaluation. Looks like you should be on course to these colleges.
However, you need to do some thinking about your Long term goals. It seems circuitous to me to say that you want to work in consulting to get into a bank. Rather, think of it as follows:
So-so undergrad - but pretty honest about it. Involved in student life outside of class. Good work experience. Solid knowledge of how economic policy-making works. This along with an MBA can help you get into consulting if you want it. It can help you do a few other things also. No questions about the narrative so far.
But if your eventual goal is to end up at a bank, why go through so many detours?
