Hi there! I agree that you have really impressive stats. Great GMAT, good grades, military experience plus management consulting likely means you've had a lot of leadership opportunities and been exposed to working in diverse teams. You also have international experience which is a plus.
You are right that a lot comes down to the execution of the application, particularly the essays, plus the interviews once you get to that stage. In particular, you need to tell a logical story for why you want to transition to a top strategy consulting firm and how the MBA will help you reach your future goals. One aspect you didn't mention is your leadership / activities outside of work. That's another important factor - schools like to see that you're a multi-faceted person who gets involved in the communities around them. This doesn't necessarily need to be volunteer work, it can be other activities, passions, interests, etc. So hopefully you're strong there too!
Based on what i know, I think you can target top 10 programs. Harvard / Stanford / Wharton are the most competitive so think of those as reaches. Other schools like Kellogg (which is very strong in Consulting) or Columbia would be good targets. You might want to add in a school like Darden or Duke for a slightly safer option. You may also want to consider European schools too, I'm not sure. Think about factors beyond just rankings though and really try to find a program that fits with your goals and values as well.
