Usually people do most activities together (outside of the free time allotted). Depends on the trip though. Some activities lend themselves to small groups going off and doing things together not as the big group (ex. day in Macao - I'd imagine you'll see a group head together off to the casino, one to spas, one to shopping, etc.). Usually the group leaders will set an expectation of what people will do all together and what people can break off in groups to do / skip.
Obviously the trip is yours to do what you please. But typically the major activities, meals, and nights out are together as a group. Usually even during activities where smaller groups will go off and do their own thing you'll see people getting back together for various things too (i.e. a day of skiing in small groups - meet up on the mountain for lunch - more skiing - meet at the bottom of the slopes for Apres Ski).
