As I understand it, it’s up to IESE to decide who has to do it. I guess it depends on how sure they are about your fit with the school or the overall strength of your profile

From IESE’s blog:

Selected candidates will be invited to attend our Assessment Days, if you did not receive the invitation it doesn’t mean that you did not proceed to the next stage of the application process. Candidates whom the Admissions Committee may have interacted with on multiple occasions or know very well may not receive the invitation to join due to limited spaces.

Very few people get invited to interview directly without the assessment day

you have to interview regardless of assessment day

Hi think this was mentioned above, but if you were invited to the assessment day and you have no "compelling" reason to miss it, then I will advise you not to miss it.

Why? Because you are going to be assessed on Assessment Day as well by someone from Adcom. So, I believe in IESE attempt to have a holistic interview process, this happens (which I believe is nice). So, the keyword is, if you have no compelling reason to miss it, do not miss it. Also, the assessment day was fun. I loved my small group session and still chat with people from that group to date.

Do they send invites on rolling basis or at one particular time? Do we receive results before 26th as well?

I think in an online event, IESE AdComm communicated that invites will be sent out via Jan 26th - 27th, give or take a few days

Those are likely just updates from a previous round. IESE generally releases interview decisions all on the same day (which they've indicated is the 26th, as per their application receipt confirmation email).
