Congrats Mayan for the interview.
To suggest some logistics - you don't need a visa for Thailand and Hong Kong - both have one on arrival, although in Thailand you need to pay some money to get your visa. Travel wise, tickets to Dubai and Thailand would be the cheapest. Staying wise, Thailand is the absolute cheapest. So my suggestion would be to check if you can interview with someone in Thailand (lower probability basis the fact they couldn't find someone in India for you), Dubai (cost of Dubai visa + ticket < hong kong ticket; stay equal at both places) and then Hong Kong.
From an alumni availability perspective, HongKong and Singapore should have a decent number of alums, and Dubai should also have some alumni plus is a hub.
Just thought I'd help out with my 2 cents. I haven't applied to Stanford but read your comment on travel. All the very best!
