Actually I have gone through the employment reports but they are not very descriptive about the employment ratio of international students. I wanted to see what realistic expectations one could have considering international student.

Can we submit the official GMAT scores after the application deadline? or they are needed at time of application? i would be taking the GMAT a week before application deadline dates so i am not sure if official score would be received by then. How does this work?

Official scores are not a requirement for application (but are compulsory after admission). Just ensure whatever you you submit as unofficial is exactly the same s official scores. As your admission can be revoked if it isn't.

Yep ....bt i guess every school does inflate their report or hide something...

I submitted my updated score almost 45 days after application deadline for R1. I took 1.5 months to prepare again for GMAT, parallel to writing applications and working full time. That might be a bit stressful. I guess I could have just prepared for GMAT and then apply in R2.
