I’ve been giving some non official mocks and the first 2-3 questions are 800+ level as per GMAT club. Is it possible that on the actual GMAT also the first couple of questions are from hard/ very hard category? Or will the first couple of questions be medium difficulty?

What section order are u following?

Same...I used to get 800+ level I'm GMAT club quant? I have the same query VQD

GMAT is sectional adaptive hope you know that so it will start with medium level question with Verbal than let’s say you end up at a hard level question at the end, then Quant section can begin with hard question, but rest assured overall test is adaptive and if you get hard questions in the beginning you will get easy questions as well in the middle or end, so don’t focus on assessing the difficulty of the quest give it your best shot
