C is the correct answer because only sentence with the correct parallelism.

The list includes the ways by which omega-3 fatty acids promote health. The items on this list must be parallel.
A - supporting… enriching… in providing à not parallel. The ‘in’ in item 3 is unnecessary.
B - supporting… enriching… provision of à not parallel. Items 1 and 2 are verbs whereas item 3 is a noun.
C – This option is parallel and hence is right.
D - ‘by means of’ is unnecessarily wordy. Within the list, supporting… enriching… in the provision of à not parallel. Items 1 and 2 are verbs whereas item 3 is a noun.
E - supporting… by enriching… providing à not parallel. The ‘by’ in item 2 is unnecessary. Thus, the correct answer is option C.
