(1) a >= 8 --- Insuff
(2) b <= 5 --- Insuff

Conbining both... for any value of a>=8 and b <= 5.....a - b would be > or = 3

Question : Is a - b >= 3 ?

Statement 1: a >= 8
No information about b hence
NOT SUFFICIENT

Statement 2: b <= 5
No information about a hence
NOT SUFFICIENT

Combining the two statements
a >= 8
and
b <= 5
Taking difference of two Inequations

NOTE: DIFFERENCE of two inequation may be taken ONLY IF their Inequality signs are OPPOSITE
Also, SUM of two Inequation may be taken ONLY IF their Inequality signs are SAME

a - b >= 8-5
i.e. a - b >= 3
SUFFICIENT

Answer: option C
