Talking about ancient civilizations, therefore the structure of events has to be in the past.
A.establish characteristic and hallmark which include not about events/activities in the past.
B.establish characteristics and hallmarks which include same as A; the only difference being singular vs. plural
C.established characteristics and hallmarks which included both in the past tense. Correct.
D.established characteristics and hallmarks which includes Similar errors as above. Also, characteristics and hallmarks creates a compound subject. Therefore, one should use include
E.established characteristic and hallmark which include not in the past tense.

option E: Which is modifying hallmark and Hallmark is a singular noun and we need a singular verb includes not include.

Sentence is talking about something in the past

So established and included is best usage here

Also characteristics and hallmarks need to be present to correctly convey meaning

C has all these things
