First off, a 680/Q49 is a strong score, so it could be enough to get you into your first-choice School. As such, a retest might not be necessary. Depending on the Schools that you plan to apply to, you would likely find it beneficial to speak with an Admissions Expert about your overall profile. There's a Forum full of those Experts here:

Before I can offer you the specific advice that you’re looking for, it would help if you could provide a bit more information on how you've been studying and your goals:

Studies:
1) How long have you studied? - Its been about 4 months of consistent effort. 2 hours a day on average on a weekday and 10 hours over a weekend . Right now I have kind of a forced sabbatical as I am in the process of working for a new employer so I have a dedicated 1.5 month.
2) What study materials have you used so far? - I have covered theory from EGMAT for verbal, Powerscore CR, Aristotle RC Grail, No exclusive material for quant and GMAT Club for quant and verbal practice.
3) How have you scored on EACH of your CATs/mocks (including the Quant and Verbal Scaled Scores for EACH)?
26 April Mock 1 Veritas: 650 Q50, V31
03 May Mock 2 Veritas: 660 Q50, V32
10 May Mock 3 Veritas: 710 Q51, V36
24 May Mock 4 Veritas: 660 Q50, V32
1 June Mock 5, Official: 700 Q47, V38
6 June Mock 6, Official: 690 Q49, V34
Goals:
4) What is your overall goal score? I will settle for anything above 730 , However would like to see a 740 on the test day.
5) When are you planning to apply to Business School? - Planning to apply for R1/R2 this year itself. I want to give another attempt latest by 20 July.
6) What Schools are you planning to apply to? - Target Schools are Booth, Columbia, Sloan, Stern, Haas
Please note: I have cancelled my score for now. The bigger picture was always to give another attempt after utilizing the break that I have with me. I thought that giving it in between would help in a few ways.
1) would help to overcome anxiety as to how a GMAT exam feels like
2) As I was under no pressure to perform in this test so I thought this might impact my performance on the test day.
Honestly I am not disappointed with the score as neither I was scoring a 740-750 in my mocks. I was definitely doing better in RCs in the mocks. The more pertinent point, however, is how to utilize the time at hand and perform upto best of my capabilities on or before 20 July.
