1) Brief description of your full-time work experience. What do you do?
I have 2 years (3 at matriculation) at a top-tier economic consulting firm.
2) Your GMAT.
730 (49 Q 40 V). Practice tests were in the 750-780 range (Verbal always 44+), is it worth my time to retake?
3) College info: The name of the college, your GPA or grade average, your major, year of graduation. For any graduate degrees, please provide the same info. If you grades are low, please indicate if there were extenuating circumstances.
3.7 in Electrical Engineering at BYU. Graduated in 2012.
4) Significant college and post-college extra-curricular activities or community service, especially leadership experience.
Currently head math instructor for a prison education outreach program. Served 2-year mission for my church, trained/led groups of ~15 other missionaries for 6+ months. Captained ~20 intramural teams during college.
5) Important certifications like CFA, CPA, FSA, or CA.
None
6) Your target programs. Please note that my experience is with the top MBA programs (FT, PT, EMBA, Sloan Fellows) around the world. If the programs you are targeting are not listed here, I may not respond due to lack of time.
Harvard, Stanford, Sloan, Booth, Kellogg, Haas, Anderson. Open to applying to most top 10-15 schools, are there any in particular I should look into?
7) When you plan to apply? Please specify round and application cycle, for example R1 2013-14 or R3 2012-13.
R2 for Fall 2015 start.
8) Your post-MBA goal.
I would like to go into management at a large tech company (Google, Apple, etc.)

You appear to be a viable applicant to the top programs that you mention. Of course, HBS and Stanford would be high reasonable reaches, but it would make sense to apply. The others are all reasonable reaches.
Please note that this assessment assumes that your work experience is stellar – i.e., that your track record of achievement is strong relative to accomplished peers and demonstrates high leadership and impact. If it’s “good” but not “outstanding,” that would bring the assessment down a notch.
Regarding the GMAT – if you can get 750+, it will definitely help. Your current score is fine, obviously. But the range you were getting practice tests could make a difference. If you can do the necessary prep and retake with reasonable effort, I think you should do so. If not, you’re fine as is.
I suggest that you look at NYU Stern also -- not an intuitive selection for your background/goals, but you might be pleasantly surprised!
