Most are a joke IMO, they just give positive feedback to every candidate and make it seem like polishing essays is all that is needed for acceptance. This is sadly evident just by reading the forums of consultants here. Sandy K and Alex Chu are the only ones that seem to give any real feedback.

If you think you need help, determine what you need from a consultant and select one that fits. If you are a non-traditional, find a consultant that is good at putting together a story that fits for you, if you just need essay editing stick with a service like EssaySnark (much cheaper).

edit: highwyre - I'm curious, which consultants would you recommend?

It's really hard to imagine that there would be people trying to game a system when there is some economic incentive to do so...

EssaySnark. I'm curious about thefirstread, I like their blog, and their take on consulting (read through an entire app, and assess like that, not essay by essay). I couldn't see myself using a full on consultant though, too expensive. Essaysnark and thefirstread are both affordable. Still doubt I'll use anything on essays, but we'll see how I feel in a month...
