IMO A

Whereas in science students the grey matter that is associated with lower empathizing is more in the medial prefrontal cortex, in humanities students the white matter has a higher density around the right hippocampus.

a) Whereas in science students the grey matter that is associated with lower empathizing is more in the medial prefrontal cortex, in humanities students the white matter--> comparing science students with humanities students
b) Whereas the grey matter associated with lower empathizing is more in the medial prefrontal cortex in science students, humanities students have the white matter that--> comparing grey matter with humanities students
c) Unlike science students, who have in the medial prefrontal cortex more grey matter associated with lower empathizing, humanities students' white matter ---> comparing science students with humanities students' white matter
d) Unlike science students' medial prefrontal cortex that has more grey matter that is associated with lower empathizing, the white matter in humanities students---> comparing science students' medial prefrontal cortex with white matter
e) Unlike grey matter that is associated with lower empathizing, which is more in the medial prefrontal cortex in science students, the white matter in humanities student---> which should be referring to grey matter.

Wrong comparison. Grey Matter is compared to humanities students.

'Which' can refer to any preceding noun as long as there is no verb between the noun and 'which'. In this case, there is one. So, 'which' cannot grammatically refer back to grey matter.

The qs source mentioned that 'which' can jump and refers to grey matter. I am confused now :/

Here, 'which' seems to refer to 'lower empathizing.' It is not till we read ahead that we realise that 'which' refers back to 'grey matter' (which has an essential 'that' relative clause attached to it). That's confusing to say the least.

Also, the comparison is lost in a non essential modifier. The essence of the sentence is the comparison.

The basic structure is: Unlike grey matter..., the white matter in humanities student has a higher density around the right hippocampus.

Also - and this is true for all options - if we are to use the noun form for empathise, we should use empathy, not empathising. 'with lower empathizing' just doesn't sound good.
