Sounds very solid, and your GMAT is absolutely fine. Given that you are underrepresented it could be even lower. Definitely apply.
Wholeheartedly agree that you should turn your attention to other elements of the application. Start brainstorming stories to share in your recommendations, the main essay, start researching why Stanford (talking to people - doing informational interviews), think about the background essay and the three impact essays. It’s a lot of work honestly. This plus the application boxes, CV. And you want to give yourself the opportunity to think about things deeply and over time. I would say one of the biggest mistakes people make is to overindex on the GMAT when the incremental improvement is nowhere near what it could be should you invest your wholehearted effort into the application quality.
