With the given score and profile, what are my chances of getting through and securing admission in the Indian School of Business (given I do the interview well)?

I believe you have a total of 10 months of experience right now which makes you eligible for the EEO option this application cycle?
Your internships are at enviable companies and I hope you made good use of your time there by learning new skills and working on a few substantial projects. That will hold you in good stead during the application and interview process. As with every other b-school, ISB would want to see your leadership potential and your ability to contribute to teams- stories from these internship experiences as well as your ECAs could give you the material to showcase these skills.
The one thing i would try changing in your profile is your GRE score- if you can retake it once and apply with a better score, that would really help.
Overall, you seem to have done well for yourself, and I am confident that if you continue on this career path, you will have the potential to get into several international MBA programs a few years down the line after gaining more work exp.

I took your advice and started prepping for the GRE again. However, I do not feel confident that I'll be able to fetch a higher score. Will the odds be against me if I apply with this score this year?
