Thank you for your post. I would definitely encourage you to retake the GMAT in an attempt to boost your score. A 680 is behind the curve for INSEAD and LBS, and while it's a little closer for Judge and Said, you'd be better shape with an above-average score when applying from a crowded demographic. The Quant does jump out as low (50th percentile), and I'd argue that the Verbal can also use some improvement.
Your international experience sounds interesting, so be sure to unpack the value of that in your essays and applications, particularly with an eye toward your goals. (Draw the connection. Address how the interest evolves. See below for more on how to develop that.) You will definitely want (and need) to develop the specificity of your career goals well beyond simply a geography and a potential industry of interest.
Also consider what about your story or candidacy is unique. Apart from the international experience, I don't entirely see what "pops" for you in the written profile above, but I'm sure it's there if you really introspected and deconstructed your personal and professional experiences. (And I understand that the space above is limited, so you can't capture everything.) Do you lead teams when you mountaineer? That could be one interesting angle. (You would want more than just that, of course.)

Regarding career goal specificity...
What company(ies) do you want to work for? What role? Where? Why? What type of projects do you hope to work on and impact do you hope to have? Within your industry, what specializations will you aim to develop or areas will you focus on? What are your long-term goals? What passion and purpose drives these goals? What exactly do you hope to accomplish if you achieve it?
How does who you are and what you've done to this point – plus the MBA – lead to your goals? What knowledge, skills, and experience do you already have that are relevant? What knowledge, skills, and experience do you lack and therefore need to acquire via the MBA? How exactly will you acquire them at / contribute to each program? Why is now the right time for an MBA?
