Nice one! Giving it a try.
IMO B(?)

The nurses went on strike to protest their being overworked.

So, nurses went on strike to protest <against> something/ some situation.
Nurses will not protest "themselves" - they will protest BECAUSE they are over worked.

A) their being overworked

B) themselves being overworked - gives an account of the situation. Keep.

C) themselves as overworked
This is comparing nurses to overworked -this is wrong (noun vs verb)
Intended meaning is that nurses ARE overworked.

D) their overworking
Incorrect. their overworking <what?>

E) overworking themselves
Now. nurses are not protesting against themselves, are they?

The nurses went on strike to protest their being overworked.

When a verb has same subject and object, then we use reflexive pronoun. E.g. Mike was proud of himself when he succeed.

Corrected!

A) their being overworked-> "Their" is correct. We don't need a reflexive pronoun. here, being is used as progressive past tense. Let's keep it.

B) themselves being overworked-> "themselves"- reflexive pronoun is not required here.

C) themselves as overworked-> "themselves As" is incorrect.

D) their overworking-> It is incorrect. Nurses are not overworking now, that happened in past.

E) overworking themselves-> Changes the meaning. Incorrect.

So, It is A. :)

The nurses went on strike to protest their being overworked.

My guess:
A) their being overworked - I feel "being" is not the right here

B) themselves being overworked - again, pronoun seems wrongly placed - to protest (something)

C) themselves as overworked - again, pronoun seems wrongly placed - to protest (something)

D) their overworking

E) overworking themselves

D & E seems ok when seen as - to protest (something)

E suggest future event, looks unclear when we say:
The nurses went on strike to protest overworking themselves

The nurses went on strike to protest their being overworked.

A) their being overworked
Use of 'their' is incorrect when talking about themselves.

B) themselves being overworked
Correct use of 'being' (present perfect) --> still ongoing. And, they are talking about themselves, so the use of themselves is correct.

C) themselves as overworked
'as overworked' is a period of time that has happened. This is an ongoing situation so the verb tense is incorrect.

D) their overworking
Same reasoning as C.

E) overworking themselves
Missing additional meaning factor.

The nurses went on strike to protest their being overworked.

Ans A

Analysis:
Why Nurses protests ?
Nurses protests because they are over worked.

Lets see the answer choices one by one

A) their being overworked - CORRECT
Grammatically i do not find any issues in this option. Lets hold on to this option for now.

B) themselves being overworked - INCORRECT
The nurses went on strike to protest themselves - This is not the intended meaning, Nurses did not go on strike to protests themselves.

C) themselves as overworked - INCORRECT
Same error as explained in option 2 and also this option changes intended meaning.

D) their overworking -INCORRECT
Nurses are protesting because they are worked by someone probably their bosses, nurses do not overwork by themselves, so 'their overworking' is incorrect

E) overworking themselves - INCORRECT
The nurses went on strike to protest overworking themselves - Again same reasoning as in option D, Nurses are not overworking themselves, they are being overworked and that's the reason of the protest.

IMO A

A) their being overworked -- Agrees with Plural Subject Nurses and the meaning is also clear---- replace their with nurses and the sentence makes more sense.

B) themselves being overworked -- Themselves is 3rd person plural -- we dont need themselves here.

C) themselves as overworked -- same error as B and akward "as" construct.

D) their overworking --- Their overworking -- Meaning error.

E) overworking themselves -- Overworking Themselves .. means not out of force so why the heck are they protesting ? -- Eliminate E
