Here, why is the usage of amount of chocolate correct? Since chocolate is a countable noun, shouldn't the use of a large number of chocolate be in the correct option?

This is how I saw it.

To decorate the tables at the event, the caterers used an array of decoratively carved fruits, like kiwis, grapefruit, and melons, along with a large amount of chocolates in shapes such as stars, hearts, and flowers.


(A) To decorate the tables at the event, the caterers used an array of decoratively carved fruits, like kiwis, grapefruit, and melons, along with a large amount of chocolates in shapes such as stars, hearts, and flowers.
Like is used for comparisons. Such as is used for examples - WRONG CHOICE

(B) Decorating the tables at the event, an array of decoratively carved fruits, including kiwis, grapefruit, and melons, along with a large number of chocolates in shapes like stars, hearts, and flowers, used by the caterers.
"An Array of ...." was not doing the decorating. It was the caterers who did the decorating - WRONG CHOICE

(C) Used by the caterers to decorate the tables at the event was an array of decoratively carved fruits, such as kiwis, grapefruit, and melons, along with a large amount of chocolate in shapes such as stars, hearts, and flowers.
Keep for now

(D) To decorate the tables at the event, an array of decoratively carved fruit, including kiwis, grapefruit, and melons, along with a large number of chocolates in shapes such as stars, hearts, and flowers, were used by the caterers.
Same as B. The modifier "caterers" is too far from the pharse that modifies it - WRONG CHOICE

(E) By using an array of decoratively carved fruits, like kiwis, grapefruit, and melons, along with a large amount of chocolate in shapes such as stars, hearts, and flowers, the tables at the event were decorated by the caterers.
Same as A. Like is used for comparisons. Such as is used for examples - WRONG CHOICE

C is the answer

Here, why is the usage of amount of chocolate correct? Since chocolate is a countable noun, shouldn't the use of a large number of chocolate be in the correct option?
I guess it is because they are talking about melted chocolate(in which case amount of chocolate should be correct) made into different shapes such as stars, hearts and flowers .

Since the opening modifier, “by using an array …” must modify the subject of the clause that follows, which is “the tables,” this version expresses the nonsensical meaning that the tables at the event used an array of fruit and a large amount of chocolate in order to be decorated by the caterers.

Also, this version incorrectly uses “like” in introducing a list of examples of fruits.

Chocolate can be used as countable or uncountable depending on context ..

C might sound terrible, but there are fatal flaws in the other choices

I have seen some "To" shows intention questions where the rule fails.
So the only explanation I see for eliminating D is highlighted by CEdward. Thank you.
Explaining the SV verb error in D and how I interpret it.

(D) To decorate the tables at the event, an array of decoratively carved fruit, including kiwis, grapefruit, and melons, along with a large number of chocolates in shapes such as stars, hearts, and flowers, were used by the caterers.

An array of fruits (is singular)
along with a large number of chocolates (still the entire Subject is Singular X, along with Y (verb depends on X))
Hence, if the sentence had "Was" it would be correct IMO.
