Executive MBAs are different from regular MBAs primarily because EMBA participants are not looking to switch careers.
Now having said that, you need to understand which EMBA has more healthcare industry participants and which EMBA has more health care related courses.
Cornell and NYU are both highly regarded for their med schools and hospitals.
While Cornell says 4% of participants are from the healthcare industry, NYU didn’t really have a students profile available (or I couldn’t find it)
You should reach our to NYU and ask them for data.
All schools have career support websiteS, so when you connect with these schools - try to get them to provide you with the number of jobs published right now for the healthcare industry, that would also help you understand the career support these schools could provide after your EMBA

Is your question mostly about taking EA and trying out Yale/Columbia?
Now while I do not have much info about the healthcare recruiting at CBS/Yale, I think you are always better off at the programs that do have more stringent admissions requirements. That keeps the class more committed and the group more selective.

At the same time, it is about what you want an MBA for. Is it for network? Validation that you can shift from Med to Management? Self development and personal reasons?

NYU EMBA states 16% healthcare/pharma
MBA- self fulfillment, perhaps eventual admin only position in 15-20 years and network

The EMBA would keep me in my current position and is for personal fulfillment, opportunities for side gigs.
Cornell allows for more flexibility in schedule as it is Saturday/Sunday.

NYU/Columbia/Yale all require Friday/Saturday

NYU EMBA was ranked #5 so is the network at Yale/Columbia/Wharton that much better for for a physician in a high paying speciality?

It’s good to be aware of rankings but rankings and M7 and all of those categorizations are a trap, nobody understands rankings and nobody has seen any M7
You want a solid network and good professors in your program (it sounds like all the programs have good professors) - go for the program that gives you that - they’re all well regarded programs.
