Good for you for trying to boost your academic profile with additional courses. Aside from a high GMAT, that is a great way to mitigate a weak transcript.
On paper, I don't think there's any preference for online vs. on-campus. I do think however that there is a slight preference for full courses from an accredited university where you receive a transcript and grade (so Berkeley extension is online but would still offer you this). Online options like Udemy, Coursera may not be graded (depending on the course).
If you've already taken and done well in Intro level courses, then yes I agree you should look at more advanced ones. If that means on-campus options, then I would go with that.
Note that some certifications (like the CFA) can also help mitigate a weak transcript. They are a big time investment though so I would only pursue that if it would help you career wise too.

Would anyone be able to offer advice/recommendations on creating an alternative transcript?
Based on the research I've done, it sounds like there isn't a difference between well-known online options (Berkley extension, HBX Core) and on-campus university classes. If anything, on-campus options might edge out online options just slightly. Can anyone confirm this?
Some of the classes I'm trying to make up are also higher-level undergrad math classes (think Numerical Analysis or Intro to Prob Theory), but I see that these classes aren't usually offered online; I'm also concerned that it'd be moot if I take an Intro to Stats online course (usually a pre-req to the classes I listed above).
Assume that I have a competitive GMAT Q score (49+) and am proactively addressing problem areas in my transcript.
