Thank you for sharing. First looking at your GMAT, getting around a 750-760 should position you very well for your target programs. Should you secure a score in this range, you may be able to think about adding some top US schools to your list. After a 770, there is limited benefit in increasing.
A strong GMAT will help outweigh the slightly lower GPA, which can also be explained in the optional essays if need be.

In terms of your strategy consulting role,

Currently, your goal of consulting in Europe is rather broad so you will want to consider how you will make your unique mark. Perhaps you intend to develop a specific area of expertise within the consulting industry or focus on a certain sector. You will want to think deeper and share your vision for improving the consulting industry.
As for your extracurriculars, you have a lot of experience here. However, remember that quality over quantity matters and that this experience should gel with your overall story.

I wanted to get your opinion on my profile for MBA programs. I'm in no rush, targeting top MBA programs non-US.
Target Schools: INSEAD (Jan '23 intake), LBS, HEC, IESE, SDA Bocconi
Wouldn't mind getting an opinion on chances at top US MBA Schools as well such as HBS, GSB, Wharton (haven't seriously considered since I feel my overall GPA is low). Regardless, Europe B-Schools are a priority.
Background: 24, Indian, Male
Education: Majored in Computer Science and Engineering with a Minor in Management from an upcoming university in India (the university is gaining major recognition across India and abroad, with a recent NAAC accreditation)
Merit Scholar (80% Tuition Fee Scholarship)
Overall GPA of 7.4/10, with 8.9/10 in Management Minor courses.
A few point to add:
1. The university grades on an absolute scale of 100 rather than a relative bell-curve grading
2. I completed 34 credits for my Management minor as opposed to the 18 required for a minor completion
3. The trend of my GPA has gone up from first semester all the way to the eighth, with 9.8/10 in final semester
4. The Management minor was very competitive, with 15 students selected to pursue one out of 290 applicants
Extracurriculars: extremely heavy on ECs (which had a slight effect on my GPA)
1. Captain of the University Cricket Team; led the team to victory at the university's national-level sports festival
2. Started the Entrepreneurship-Cell on Campus and Headed the same
a. Led a team of 25 undergrad and grad students to organize events and campaigns
b. Organized a national-level b-plan competition in association with Govt. of India
c. Today, the E-Cell has partnered with one of the Indian Govt.'s programs and established a startup accelerator on campus, which fosters development of 13 startups
3. Headed the Partnerships Team of the University's Annual Cultural Festival
a. Managed a team of 15 to procure partnerships and sponsorships
b. Secured an amount of Rs. 27 lacs in sponsorship ($36,000), which was a 40% YoY growth in amount
4. Elected as external affairs secretary for university sports for University's Student Council, responsibilities included leading the entire university's sports contingent to national level sports tournaments
5. Exchange Student with Rotary International this one is from 2013-2014, so not sure how relevant
a. Chosen amongst 60 applicants for a fully sponsored one-year cultural exchange program
b. As a high school student, led the 4-person high-school robotics teams to victory at VEX Robotics State Championship, and represented at 2014 VEX Robotics World Championship

Work Experience: 2 years with ZS, in a strategy consulting capacity with a major hotel chain as a client (although the official title is Business Operations Associate), will have ~3.5 at matriculation
1. Expecting promotion to Associate Consultant in December
2. Handed a responsibility of handling client's clients within 3 months of joining as an associate, while the average associate is given such a responsibility after ~a year
3. Handling on average a combined revenue of $43 mn by independently handling a portfolio of 30 client hotels
4. Currently managing a team of 5 in a new side-project with the same client unusual for associates
