My 2 cents
1. As Audit is not usually considered a feeder profile at the ultra-competitive schools, you need to substantiate some solid experience founding and scaling up your own firm (or at least show substantial learning putting together the building blocks of this business model). You have a wide variety of ECs, but your professional experience and achievements will carry the bulk weight during your evaluation. How successful has your business been so far? If you think you can pull of some impressive feats in another year, that will add immense value to your application for M7s or Top 10 global MBA.
2. If consulting is your goal and if you are open to looking at schools outside of the US, consider LBS and INSEAD which are amongst the largest feeders into MBB and other consulting firms. You can also look at HEC (big on entrepreneurship) which has an optional integrated exchange program with Yale/NYU Stern. You would get a dual degree and have the chance to look for work in the States. INSEAD also has a popular exchange program with Wharton which you may want to read about. Be strategic in selection of your schools and balance safe, target and dream schools in optimal ratio.

Congratulations on achieving a sterling GMAT score. Your GPA also seems aligned with your previous academic records.
On the work front, 2+ years of work experience in a big brand like Deloitte sounds good. However, since you have mentioned quitting your job and starting your own firm in organic agriculture, it seems quite unique. I am sure it will be backed by exemplary stories to tell the AdComs. You should also highlight any major achievements during your time at Deloitte to exhibit your strong work profile. You will need to explain how you contributed to the growth and advancement of the company, as AdComs are very interested in learning what the candidate is going to bring to the table.
Coming to the EC’s, a major attraction that caught my eye was your contribution to the farmers around your town with managing finances. This displays your social responsibilities and working towards betterment of the society. Publications and other community services (blue cross) should also be adequately displayed in your application.
Your post-MBA goals are outstanding, especially your long-term objective of a startup. You look to be one of the rare individuals who have obvious, defined motives for earning an MBA. Emphasize how business school will help you fill in the gaps on your resume and direct you toward your life goals. Overall you have a decent profile. You will need to just focus on bringing the values of the business school you want to target to the table.

Your target business schools are highly regarded and obviously quite selective. Therefore, it would be excellent to learn more about your work experience—specifically, what you do and what you have accomplished there. Ross, Duke, and Cornell appear to be your goal programmes based on the limited information on your resume. Just concentrate on the GRE, as that will take the most time when it comes to bolstering your profile, in my opinion. Additionally, you will need to write multiple applications. Therefore, you don't need to add any additional activities to occupy your next two months; just these two activities will do.
Your job goals are a little unclear to me because I don't quite see how they relate to your past actions. An MBA, however, gives you the chance to change course. Despite this, you should still outline objectives that make sense to you.
