I think your profile is nice. The risk is that there may be a person with a nicer profile who also got a waiver. Last year, I think only 2 people got in with a waiver. I was interviewed with the waiver before I got waitlisted.
It is a good move that you have signed up for GMAT, please remember to mention it at the interview if you get an invite before the exam. If you don't, just update them so you can get an invite. I wish you all the best.
I had my interview yesterday and it was the regular questions. Tell me about yourself, why MBA, Why Simon, Tell me about a time a team mate dropped the ball and what you did about it. An on the spot essay that I typed in a Zoom chat box and that was it.

Pro Tip: For anyone applying to Simon with a GPA of 3.2 and below and GMAT Waiver.
I applied last year with a waiver and was waitlisted. It was later that I discovered from internal sources at Simon that my undoing was the lack of test score. Before the waitlist decision I wrote GRE but it was too late by then. My advice to people who are like I was last year is that they should attempt GRE or GMAT. I saw scores as low as 307 get in last year because they submitted their app with it. My higher GRE later was no longer sufficient to get me in. I repeat, take a test, they are not that hard. Also if you are remotely interested in a scholarship, take a test.
