First, let me congratulate you on your strong academic record - both at undergrad and graduate school. As well, all your achievements during school including winning a full scholarship, research grants and so on. I think deferred MBA programs will find your background compelling especially given your track record of leadership and volunteering.
It also sounds like you have given a lot of thought to your post-MBA goals in nonprofit. Are you pursuing job offers in this field? An offer will show the Admissions Committee that you have taken steps to move into this career.
Overall, I think you have a compelling background for the deferred MBA programs. They are not simply looking for past internships or "professional" work experience - they would also appreciate your research and volunteering experiences. That said, it's important to describe what motivates you to be passionate about your career goals. And how an MBA will help you in the future. As I mentioned above, having a job offer will make your story even more robust.
