I'll be a volunteer at the NGO for about 1.5 years by the time I apply next June. My mentor is assisting me in developing the curriculum and road map to support a child's education and aftercare, and I will be teaching and mentoring the child through that curriculum.
Yes, she will definitely be able to point out my achievements, since I will be accountable to her. However, my main concern is the credibility of her LOR and if the Adcom will see it to be as effective and objective as one from an employer.

Hi,
I will be applying for MBA programs in 2020 for 2021 intake.
Now, I have my immediate manager who will provide a letter of recommendation for my application. I'm struggling to find a second recommender for my application, as I was working on my startup(one-man startup) for the last 3 years and I do not have any credible recommenders from that part of my career.
Is a letter of recommendation from my mentor(she's a student) at the volunteering organization I work for, acceptable?

You should check out the requirements of the various b-schools you are planning to apply to.
I think the past 3 years' experience is crucial because 1. its recent and more relevant to who you are today; 2. you would probably have worn several hats as an entrepreneur; 3. it may be linked to your career goals. Is there any business association with a company, like having a client or a business mentor or an investor who could recommend you?
I'd look at the volunteer organization only if there is no one from the entrepreneurial capacity. How deep is your involvement at the organization and how closely has this mentor seen your work? Can she bring out some good achievement examples where you made significant impact?
