My grandmother is the most remarkable person of all the persons I have ever met.
(A) My grandmother is the most remarkable person of all the persons I have ever met
'of all the persons' is redundant. 'most remarkable person' can stand alone.
(B) Of all the persons I have ever met, my grandmother is the most remarkable person
Correct IMO. Meaning is clear and maintains idea.
(C) Of all the persons I have ever met, the most remarkable person is my grandmother
'grandmother' should be the first noun that follows after the comma. Active is preferable over passive.
(D) Of all the persons I have met, the most remarkable is my grandmother
Same reasoning as C.
(E) My grandmother, of all the persons I have ever met, is the most remarkable
The idea that the grandmother is the 'most remarkable' does not fulfill the idea. It needs more information. i.e remarkable at what / remarkable + noun?
(A) My grandmother is the most remarkable person of all the persons I have ever met

IMO,
Modifier, Of all the persons I have ever met, must modify my grandmother because she is the one amongst all the persons I have ever met. Only choices B and E follows the right modification, remaining choices out.
Now, between B and E, In B - the word person is redundant.
So, I will go with E as the right answer.
