There are a lot of people on this forum far more experienced than me with studying for this beast. I appreciate any advice or thoughts.

What I have done so far:

1-I familiarized myself with the GMAT basics like sections, completing the questions, timing...
-------Practice CAT--Kaplan--660--Q=44--V=37
2-I read from Kaplan GMAT Prep Plus (I read only the chapters about approaches for the question types).
-------Practice CAT--Kaplan--720--Q=46--V=43
3-I read from Kaplan GMAT Prep Plus (I read the remaining chapters--this was the math and grammar chapters).
-------Practice CAT--Kaplan--740--Q=49--V=43
4-Completed Kaplan GMAT Math Workbook

What I plan to do from here on out:

5-Complete Kaplan GMAT Verbal Workbook
-------Practice CAT--Manhattan Prep
6-Complete the portion of Manhattan prep book set that is on math and take notes of everything I need to study.
-------Practice CAT--Manhattan Prep
7-Complete Manhattan Prep Foundations of Verbal
8-Complete the portion of Manhattan prep book set that is on verbal and take notes of everything I need to study.
-------Practice CAT--Manhattan Prep
9-Complete Manhattan Prep Advanced Quant
-------Practice CAT--Kaplan
10-GMAC official guide
--------Practice CAT--GMAC
11-GMAC Math Book
12-GMAC Verbal Book
-------Practice CAT--GMAC
Register for the test
13-Kaplan Question Bank High-Difficulty Questions
-------Practice CAT--Manhattan Prep
14-Manhattan Prep Online Qbanks (that come with the books)
-------Practice CAT--Manhattan Prep
15-Princeton Review 1138 GMAC Practice Questions
-------Practice CAT--Manhattan Prep

I would you advice to take one of the GMATPrep mocks some time in the near future and leave one for later. This mock will give you the best possible estimate of where you are currently. Kaplan, Manhattan and all are good for practice but noting beats GMATPrep as an accurate indicator.
