During the practice, I always got anxious and ended up losing a few minutes because I could not think of what to write because of the given time limit.
On the exam day, will we get a paper or a note where we can write our planned response?
Answering our second question first: You get the spiral bound notepad and pen during the GMAT, and that's for all parts of the exam. You don't get anything different for AWA.
Before you actually start typing any essay, you must think about
what to write and you must plan
how to structure the essay. Time spent on this isn't lost or wasted: it is an essential part of essay writing.
Deciding what to writeRead the prompt, identify premises and conclusion, and identify potential flaws in the argument. Once you identify three problems, you can write a solid essay with introduction, three body paragraphs, and conclusion.
Three body paragraphs is the most common structure. But two body paragraphs or four body paragraphs could work too. You need to identify problems and think of examples to explain them.
This is essentially a Critical Reasoning task. You will be able to do it faster if you practice and improve in CR.
Planning the essay structureThis can (should!) be done in advance, not on exam day.
The AWA post from chineseburned is a masterpiece. Read the post and learn the essay template. Or you could use some other template, or you could write your own. The important thing is to have a template.
On exam day you just fill in specifics for the given argument.
If thinking about what to write takes time, or if typing speed is slow, then the essay will be shorter. But the shorter essay should still explain the argument and explain the flaws in the argument. It should still be properly structured and complete, with an introduction, body paras, and conclusion. You will still get a decent score.
