First of all, Congratulations on your admits!
Well, it is very clear that you are super-inclined towards the Consulting industry. When it comes to consulting, you cannot go wrong with Either ESSEC or INSEAD, as the Tier 1 consulting firms would recruit from the Top 5 schools of their home country.
Here's what makes the difference - ESSEC has a stronger brand in France, while INSEAD has a stronger brand internationally. So if you want to work in International markets post your degree, INSEAD would give you wider options. If you are interested in setting in France, ESSEC can be a good choice.
But you must also make sure that the school you pick should be inclined towards your long term career goals.

ESSEC has an outstanding employment rate of 98.2% with an average salary of €65K. Also, the top recruiting sector is known to be Consulting & Audit with 35% followed by Finance and Health. On the other hand, the INSEAD program is newly launched so much data is not available for the same. INSEAD's MiM being a new program there are no statistics for the MiM program as such but the school has one of the strongest corporate networks internationally (Recruiters like BCG, Bain & Company, Accenture) and I am sure they will be utilizing the same network for their MiM program as well.
So it depends upon how long you would like your course duration to be and where you would like to work - If you brainstorm on the above points, you should be able to make a decision easily.
