(A) Inuit people have a diet that provides - INCORRECT. Diet should be the subject

(B) Inuit people in their diet provide - INCORRECT . Diet should be the subject

(C) diet of the Inuit people provides - CORRECT -It is a fact. So provides is correct

(D) diets of the Inuit people have provided - incorrect. present perfect is not apty in this situation

(E) diet of the Inuit people, providing - incorrect. no verb for diet of the Inuit people

The things we should consider is:
1. Modification.
"Primarily consisting of arctic fish, aquatic mammals, and caribou" should modify the diet.
2. Verb tense.
Present perfect tense should use with Past Simple Tense.
3. Subject-Verb Agreement.
The sentence should have "Subject" and "verb".

Elimination process.

Quote:
(A) Inuit people have a diet that provides
Mistake#1. Out.

Quote:
(B) Inuit people in their diet provide
Mistake#1. Out.

Quote:
(C) diet of the Inuit people provides
No mistake. Keep it.

Quote:
(D) diets of the Inuit people have provided
Mistake#2. Out.

Quote:
(E) diet of the Inuit people, providing
Mistake#3. Out.

So I choose C.
