To directly address your questions:
(1) Age. Being 31 at matriculation will not put you in a disadvantage at all. Don't worry. Just make sure to demonstrate career progression accordingly.
(2) Changing jobs 1.5 years before expected intake. This won't be an issue either. Just make sure to justify it as a vertical move upwards in your career.
(3) PR industry. PR is as good an industry as any. B-schools look for diversity of backgrounds in their classes, and INSEAD is no exception. Stressing how you directly consulted C-level executives on the communications strategies of their companies will help in your candidacy.

Education: PhD in Molecular Biology from the University of Strasbourg, France and a Master in Innovation Management from the University of Strasbourg (post-PhD)
GMAT Score: 700+ expected
Industry: Biotech/Pharma industry (5 years experience in a biotech startup company)

Job description:
Current role:
I am currently working as Business development manager within the startup company. I am shareholder and part of the management team. (we are 11 people).
I have been involved in the growth of the company since its start. I have been involved in two seed fund raisings (over 1.1M€ from VCs and banks).
My current position aims to meet senior scientists and C-executives from the pharma/biotech industry, all over the world, and introduce to them our cutting-edge technnologies and sign fee-for-service contracts, research contracts or collaborations for the development of innovative medicines.
As part of the management team, I am involved in the strategic decisions of the company. I have been instrumental in developing a new geographical and technological markets for the company. I have been involved in structuring the business activity and we grew the revenues by 1500% in 5years.
International exposure:
I have had the opportunity to study (UK, 1 year) and performed research internships abroad (UK, Canada, 6 months each) and I have worked 1 year and half in germany (altough this experience wasn't as successful as expected for the company).
I travel quite a lot to grow the business of the startup (US, Europe (France, UK, Germany, Spain, Belgium, Netherland, Sweden, Switzerland...) and Asia (Taiwan, Hong-Kong).
Professional Achievements:
Two fund raisings, revenue growth, strategic collaborations with small, medium and big pharmaceutical companies.
Post MBA goals :
I woul like to learn how to manage a global business to grow the company and take senior positions in the startup.
I am also opened to take new challenges as a consultant or positions in bigger pharma companies.
Current Extracurriculars:
I have been the general manager, during my PhD, of the first tri-national forum (France, Switzerland and Germany) which aimed to allow PhD candidates in meeting private companies to extend career opportunities outside academia. (University of Strasbourg).
I have been coaching PhD candidates in startup creation events organised by the University of Strasbourg, to bring my business development experience.
I also practice triathlon (small and medium distances) as an amateur.
Languages known:
Fluent in French, English and Portuguese
Notions of Spanish and German.

Your start-up experience will be much appreciated and will give you great stories to tell in the essays. Furthermore, you have the multi-cultural / international aspect that INSEAD likes so much. Make sure you leverage on these two aspects in your application.
Just a couple of suggestions:
(1) In your application, be more clear on your immediate post-MBA career goals and stick to just one goal (e.g. grow your start-up, consulting or big pharma).
(2) It would be great if you could mention at least one more extra-professional activity that you are currently engaged in.
