I believe the main theme is that State of Maine is sharing border with Quebec and new brunswick, however is adjacent only to New hampshire.
Its a peculiar case where border is shared with two provinces but adjacent only to one, I think a contrasting element is needed.

A) Sharing land borders with two Canadian provinces, Quebec and New Brunswick, and adjacent to only one other state, New Hampshire, is the US state of Maine, in the extreme northeast corner of the continental United States.

Verb misplaced; sentence starts with modifier "Sharing" and "Adjacent" should have modified directly "The US State of Maine"


B) In the extreme northeast corner of the continental United States, the US state of Maine, sharing land borders with two Canadian provinces, Quebec and New Brunswick, and is only adjacent to one other state, New Hampshire.

Verb missing for US state of Maine before placement of "AND"

C) The US state of Maine, in the extreme northeast corner of the continental United States, shares land borders with two Canadian provinces, Quebec and New Brunswick, but is adjacent to only one other state, New Hampshire.

Seems alright.

D) Two Canadian provinces, Quebec and New Brunswick, share a border with the US state of Maine in the extreme northeast corner of the continental United States, and one state, New Hampshire, is only adjacent to it.

Is refer to what? and portion highlighted in red is a complete mess.

E) Only the US state of New Hampshire is adjacent to Maine, which shares a border with two Canadian provinces, Quebec and New Brunswick, in the extreme northeast corner of the continental United States.

The hero of the sentence is "Maine". But New hampshire is been given more emphasis here.

Can you explain how use of "but" in option C is not incorrect?

Using but implies a contradiction, which is clearly not the intended meaning for the sentence. Wouldn't And be a preferred choice here?

And in option E, I understand Maine is not given the importance, but what if author's intended meaning was for focus on NH? How can we rule the option out solely on that analogy.

The use of "but" in C is correct, as the sentence is drawing a contrast between the fact that Maine shares a border with two foreign provinces but only one state from its own country; the contrast lies in the seeming contradiction of a state having more contact with a foreign country than with other parts of its own. In other words, the contrast comes from the disconnect between the reality of the situation and the conventional expectation.

Further, another way to look at Option E is that it places information that is core to the intended meaning of the sentence - the fact that Maine shares a border with two Canadian provinces - between commas; remember, information vital to the core meaning of the sentence cannot be placed between commas.
