I took my first practice test today without any prep or studying and scored a 630. I’m planning on studying heavily for 3 weeks and am aiming for a 730, is this doable?

Welcome to GMAT Club.It depends on how weak you are and how quickly you can gain improvement points but in general, with the information you provided, I would preface to say that it is not an easy fit. The challenge is not so much learning but rather practicing strategies and applying them. It takes time to make mistakes, get your footing, and try different approaches. With 3 weeks it is possible to cover quite a bit of material but strategies are tricky. It is also not uncommon for the scores to go down at a certain point when people go from gut feel to new strategies that they have not polished yet and have not gained muscle memory for....
Generally the suggestion is to study in no more than 2-hour chunks. Have breaks in between and do some review/application.
With 3 weeks, you will not cover all you need to cover. I don't know from your score what you need help most with but thinking about timing, you probably can finish the Magoosh course in 3 weeks or perhaps Kaplan Math Workbook and Kaplan Verbal Workbook. I can't see doing more than that really but you may prove us all wrong if you are good cramming! (by us, I mean me alone).

There are two ways to improve your score on the GMAT. The first is focusing on content review and building up your knowledge of quant and verbal rules, methods, formulae etc. The second is to fine tune your in-test process. That's targeting things like your approach all quant questions (capturing, visualization, setup of equations and rapid execution / calculations) and all verbal questions (eg. answer elimination by vertical skimming in SC or core topic focus in RC reading). For each level of content knowledge the strength of your approach can change your live-test score by 50 points (maybe more).
With only 3 weeks left, you don't have the time to significantly change your content knowledge (but you can definitely improve it). I'd strongly focus on your in-test process, timing management and other process related improvements which have a very short timeframe to create impact. And get a coach who specializes in that type of performance improvement -- to increase the gains and impact in your short time frame. Happy to discuss further and get more specific if you wish.
