Any chance you can get that GMAT score up in the 730-740 range? Your undergrad GPA is solid, but as (I assume) a white male from consulting you are coming from a competitive demographic & a 710, which solid, is not a differentiating score & is below average for schools like HBS, Wharton, Stanford, Tuck, Yale, & Columbia. With your current score, Duke & Cornell will be good targets but the other schools you listed will be more of a reach.
In addition to the GMAT, it will also be critical to be able to demonstrate that you've driven meaningful, quantifiable results at work. You'll be competing with folks who are coming from the MBBs & will be compared against them, so it will be important to show that your experience is just as strong if not stronger. Like I said, there are going to be plenty of other people applying who have similar backgrounds to yours (only from the MBBs) so you've got to do everything you can to differentiate yourself so the adcom chooses YOU over the competition.
Post-MBA goals are an important way to differentiate yourself as well, and your sports related ones are definitely more unique. If you can flesh out a strong story there I'd recommend it over the consulting path. Consulting is a very common post-MBA goal & risks being one more way that you blend in with the crowd if you go that route. Starting your own consulting firm is a bit more unique but it's still a tough post-MBA goal -- it's hard to convince the adcom that you'll be able to compete with existing firms that have more resources that you & an existing talent & client base. In contrast, the sports-related goals are quite unique & although you will need to be sure to flesh it out -- the adcom will want to know your target title & what exactly you intend to accomplish -- that could be the stronger route to take from an application stand point.
Although not a differentiator, your extracurriculars are solid & it's great that you've showed continuity with the boys & girls club. If you've got some leadership experience you can point to there or any business-related, quantifiable results all the better.
Long story short, a higher GMAT score & some strong goals will go a long way towards strengthening your candidacy & no matter what it will be critical to differentiate yourself from all the other candidates who "look like" you in some way (background, demographics, etc).
