In Manhattan book the following sentence has been mentioned as correct
We have as many apple as need to be cooked
i feel it should be
We have as many apple as needed to be cooked.
can anyone tell me i am wrong and the book is right?

The book is right. That is the correct expression. Imagine that there is a we in front of need. This is present and so needed would be incorrect. However it should be apples plural, imagine that might have been a typo.
