I have been admitted to all three: Bocconi, St. Gallen, and HEC Paris.
I would like to have your opinion about which B-School to choose. The cost of the programme is not relevant for the decision at the moment.

Among those schools seems like HEC is usually best ranked in various rankings :

I am personally inclined toward St Gallen and went over both curriculum's, but have to admit HEC Capital markets/Financial engineering specialization is interesting and aligned with your goals, although I dont see anything similar such as course in Computational Finance that St Gallen has.
I also like their London trip networking and professional experience requirement (4 months full time job).
Having in mind that you come from Belgium, there is a chance you are speaking French (cannot say the same for German), which is another reason for giving advantage to HEC in your case.
On another hand, tracks such as Financial Markets, Risk Management and Insurance and especially Quantitative Methods & Data Science at St. Gallen are simply awesome.
Financial markets is track that you want, I personally find Quantitative Methods & Data Science most interesting (Advanced Math, Stat and Econometrics, Computational Finance, Machine Learning, Smart Data Analytics )
I believe you are also aware of Commodity Derivatives Trading in London/Private Equity in Singapore/Quantitative Portfolio Management in Frankfurt opportunity.
Whatever you choose between HEC and St. Gallen, you cannot go wrong, although HEC is maybe more suitable for you.
I would rule out Bocconi in this settings
My vote goes to St. Gallen and I admit I am little bit biased as being already a Quant
