AbhinavMehrotra, that's pretty epic work experience, so props on that. regarding the 2.5 GPA, as far as i know for admission, the "typical" minimum is a 3.0 in final year. and also, as far as i know, that's "typical", and ergo not a hard minimum. you've got great work experience, an awesome GMAT (not many in my year have 750s, probably less than 10). just make sure you've got great stories for your essays. you've already mentioned the reason why your GPA is low, all those side projects you did. make sure you highlight that, and make sure those side projects were impactful, not only for you but for your clients too.
now if you don't have a 3.0 GPA in the final year, that's a different story. you might have to confirm with admissions on that.
again, this is from my experience through admissions, from what i saw in first year. these are my thoughts and opinions so please don't quote me on this. you should ask admissions to make sure if you're worried.

edit: just realized i didn't really answer your question. is the 2.5 GPA surmountable? maybe. but if i'm going to be honest, i have to say the chances are not great. you really have to sell yourself.
