I think they require an official acknowledgement. Pasting partial content of the email below
"You may schedule your interview at your convenience, but you must respond to this invitation within two weeks of the date of this email. "

I don't know. It sounds like "You can register for an interview at your own convenience but do so within two weeks of receiving this email."
Why don't you just send a simple email to admissions committee to clarify? Of course, register your interview as soon as you can.

To me it feels like you guys are thinking too much for NOTHING. Just schedule your interview and revert to that mail stating you have successfully registered.
