(D) is determined ((through)) genetic factors, environmental factors, as well as interaction ((among)) - same as A. Usage of among is incorrect. It should be between. Eliminate.

Thus, E is best.

And 'both' means two items, whereas three items are given in parallel..

Same as above

(D) is determined through genetic factors, environmental factors, as well as interaction among
AND is missing..
Equal weight age to three items requires parallelism in three items and use of and

I have a doubt between D and E.
Don't we use among incase of more than 2 items and between incase of 2 items.
Here it is more than 2 items so IMO among is appropriate.

(E) is determined by genetic factors, environmental factors, and interaction between - CORRECT, Correct Idiom usage is "Determined by " . Also there is perfect parallelism X,Y and Z

Split 1 - SV Agreement Error
Subject = "Variability"
Verb should be singular

Split 2 - use between to compare 2 things, among to compare more than 2 things

Lastly - "Both X and Y" parallelism marker isn't used correctly in (C)

"determined by" is more commonly used, but i don't know that it's more correct than "determined through" - I guess this is contextual.

Answer E correct

Intelligence is determined genetically and degraded by aspects of the environment (the family environment has no influence over adult intelligence). The heritability of intelligence in adults in developed nations is 85%. More importantly the heritability of psychometric g is up to 91% heritable. Heritability is defined as the variance in the genotype, divided by the variance in the phenotype. When measured in young children, heritability is relatively low, but it increases until adulthood, as shown by the figure below:

This rise in heritability is known as the Wilson Effect. The environment is not a potent factor in determining intelligence. Keep in mind that heritability is defined and determined at the group level.

The Wilson Effect is important because it is robust and shows that beliefs in the potency of environmental factors on intelligence are wrong. If the environment were changing our brains, the impact of those changes would be increasing as the environmental dose increases. The opposite happens.

The shared environment (family) accounts for none of the total variance after age 12. You can also see the 85% heritability in adulthood. Some data show that this level is reached in early adulthood.

So far, there is no known practical means of boosting intelligence. If a person has an IQ of 80, he is likely to maintain that relative position throughout his life.

To answer your query, the first construction is typically preferable, but the latter may be better for cases wherein special attention needs to be called to element D.

Such a distinction is unlikely to be a deciding factor on the GMAT, however.

I eliminated the B and D because they had 'among' at the end of the sentence and i feel a comparison of only 2 elements are made hence if need be between should have been used.
